Ever wonder how that delicious pecorino cheese is made? My students and I recently embarked on a fascinating field trip to discover the art of cheesemaking! We witnessed the entire process, from transforming fresh milk to aging the wheels in cool cellars. Needless to say, our learning concluded with a delightful tasting session...

After the forms are filled, they will be taken into the "hot room" where the high temperature will allow the bacteria to do its magic


The residual whey isn't thrown out -- it's used to make creamy ricotta!
